Procedure to prepare chicken bhuna masala: Take a large 'Tawa' and put it on high flame. Add Mustard oil to the pan, bring it to the smoking point, and switch off the flame to cool off the oil.

- Wash the mushrooms and green pepper and sliced thinly.
- Heat the oil in a large deep frying pan and fry the 4 to 5 minutes on a medium heat.
- Add the curry sauce, chicken, salt, chilies and food colouring.
- Turn up the heat and bring to the boil and continue cooking for about 5 minutes stirring frequently.
- Turn down the heat slightly and stir in the garam masala, ground Cummin and fenugreek and cook for a further 5 minutes stirring now and again.
- With the spoon dipped in cold water spoon off any extra oil and sprinkle with green coriander.
