Procedure to prepare chicken bhuna masala: Take a large 'Tawa' and put it on high flame. Add Mustard oil to the pan, bring it to the smoking point, and switch off the flame to cool off the oil.

  2. Heat the oil in a large deep frying pan and fry the 4 to 5 minutes on a medium heat.
  3. Add the curry sauce, chicken, salt, chilies and food colouring.
  4. Turn up the heat and bring to the boil and continue cooking for about 5 minutes stirring frequently.
  5. Turn down the heat slightly and stir in the garam masala, ground Cummin and fenugreek and cook for a further 5 minutes stirring now and again.
  6. With the spoon dipped in cold water spoon off any extra oil and sprinkle with green coriander.
